What does gluten free mean to you?
Since 2018 I’ve been eating gluten free. Everyone who has been forced (for health reason) to switch to a gluten free diet has a story. Mine started by feeling terrible for days on end. Day after day. And eventually feeling terrible started to begin to feel normal.
Once I figured out that gluten (and later dairy) was the issue I changed my diet. Previously I was a big pasta eater, charcuterie with crackers and I ate out a ton. That all changed when I first changed my diet. Not knowing much about gluten in the beginning I just stuck to meats and vegetables, rice and quinoa. I was super gun-shy from getting sick from restaurants that said their dishes were GF but they really weren’t. I didn’t know what questions to ask or how to differentiate between gluten friendly and gluten free establishments. But, the learning curve was quick and do I mean QUICK.
